Ingredients
1 box (15 pieces) Athens phyllo shells
1 large heirloom tomato
1/4 pound Fontina cheese
1/4 cup basil pesto
6 basil leaves, shredded
Directions
  1. Preheat oven to 375 degrees. Set the phyllo shells on a baking sheet.
  2. Seed and chop tomato into small pieces. Cut cheese into small cubes. Add 1/2 teaspoon pesto to the bottom of each shell. Top with a few small cubes of cheese and tomatoes, until full. Repeat with remaining tarts.
  3. Bake for 10 minutes or just until cheese is melted and begins to bubble. Remove from oven and add to serving tray.
  4. Scatter strips of basil over the top of the shells.
